Menu Plan Monday: The Prodigal Version

Oh Menu Plan Monday, how I've missed you! I've wandered away...but have now returned. (Is that fattened calf I smell roasting and is that my angry brother over there?)

Here's what's cookin' this week(or at least planned):

Monday: No Fuss Chicken, asparagus, salad, rolls
Tuesday: Shortcut Lasagna, salad, garlic bread*
Wednesday: Pinto Beans with sausage and cornbread.
Thursday: Leftover Buffet
Friday: Leftover Buffet, Act 2 or eat out

*This might be iffy, since A. has been invited to a birthday party at The Rat place late Tuesday afternoon (um...really, who plans a weekday party???)

  2. what? a weekday party? well...at least chuckee's will be less busy and perhaps save you some headaches. which reminds me, k has been begging to go to that place since october...
    i love your menu. i may do lasagna for one. well, two with k. :)

  3. just did my menu this week too-what's left of it. I can't always get to it on the weekend, but now that the cupboards are bare, guess I gotta get to the store myself. love the idea of "leftover buffet". my youngest sister calls it "your delight" which I like too. I've been doing that for lunches though, so not usually enough for dinners....

  5. So how does one cook pinto beans with sausage? I really would like a lesson on this. Sounds yummy!

  6. Well, I kinda just wing it by following the quick cook directions on the back of the bean bag, sprinkle Tony Chacheres (sp?) cajun seasonings heavily, maybe a bit of bacon(raw), simmer until tender,then add the sausage about 30 minutes before serving.
